47Ok, so you know pound cake. It’s that heavy, rich, gold colored cake that has a buttery finishing taste to it. It is a classic dessert, featured in many eateries in the world over. Served ala mode (with ice cream on the top) in diners and piled high with fruits or caramel sauce in more upscale locals. None the less with it’s gold color, ability to fill you up and amazing density it is an amazing fall treat in it’s own right but that’s not to say that you can not do something to play with your food and make a standby of the dessert
world into a seasonal favorite. So let’s talk about some options for punching up your pound cake.1. Nuts- get a cup of chopped walnuts and mix it into your batter once it is complete. You do not need to make any changes to the batter for this modification. You could also sprinkle them on top if you are feeling less adventurous. 2. Pumpkin- grab yourself 6 ounces of canned pumpkin to add into your mix. For this substitution you can mix out 1/3 of your butter. You may have to increase your cooking time by a little to compensate for the extra moisture. Just keep an eye on it.3. Apple- Dice up an apple of any variety (you choose your favorite, but be warned that too sweet of an apple may get lost in the flavors and too tart will provide a strong contrast. Your favorite eating apple may not be your favorite baking apple. Once the butter is in your loaf pan of choice, sprinkle the diced apple on top spreading as evenly as possible in the loaf pan. This should require no substitutions in your mix.So there you are, some fun and seasonal ways to dress up your plain old pound cake and re-invent a classic recipe as a seasonal favorite. It’s a risk worth the taking, and much less complicated than some of the things you could try, without getting such flavorful results for your effort.
